5/5 — An unforgettable family stay
We spent five days at Aqua et Oleum as a family of four — including a toddler and a teenager — and it was, without question, one of the best trips we've ever taken.
From the moment we arrived, it was clear this wasn't going to be an ordinary hotel stay. The property itself is beautiful and immaculately kept; every room, common area, and outdoor space felt genuinely clean and well cared for, which matters so much when traveling with a toddler.
Chef Ruben deserves a review all his own. Every single dinner over our five nights was phenomenal — easily the best food we've had on any trip, anywhere. Each meal felt thoughtful and beautifully prepared, and it was clear he takes real pride in his craft.
What really made the trip, especially for our youngest, was our driver. Every day he took us out to explore — olive groves, nearby castles, and hidden swimming spots we never would have found on our own. Having someone so knowledgeable and patient with a toddler in tow made all the difference; he turned what could have been a stressful few days of logistics into the highlight of the whole vacation.
Beyond the food and the excursions, the entire staff catered to our every whim and need, big or small, without ever making us feel like an inconvenience — a rare thing when you're traveling with kids at very different ages and stages.
We left already talking about when we can come back. This is a place we will never forget, and we recommend it wholeheartedly to any family looking for a truly special getaway.

Great hotel, superb kitchen and facilities. The design and all decoration of the facilities is done to a high standard while respecting the old oil mill. The swimming pool and gardens are well looked after. Our room was amazing, huge and comfortable bed and great service.
Only inconvenience it does not allow to flush toilet paper and there is just an ordinary bin to dispose of toilet tissue. Individual plastic bags and regular room service to change them should be in place.
Also, the hotel is not easy to access, there are two tracks to access them and we just found out two days after we arrived that there is a one way system as the tracks are trecherous.

Some frustrated expectations
We were there on June 11 with a large group for a work lunch, and to our surprise, they served us a sad gazpacho as the first course without any garnish, the plates and cutlery were cheap and flimsy plastic, in a 4-star hotel!!!!!!! I have not seen this even in roadside menu restaurants, and with the color inside, they only offered us one drink per person; better not to mention the dessert, and to top it off, some people did not even get the first course, everything was very scarce.

Ya he escuchado de varias personas que este almuerzo resultó decepcionante para algunos asistentes y, por ello, he pedido disculpas sinceramente. Mi entendimiento era que se trataba de un almuerzo informal, tipo cóctel, pensado para que los asistentes pudieran conversar y relacionarse de manera distendida. Sin embargo, terminó convirtiéndose en una comida más formal y sentada sin que yo tuviera conocimiento de ello, lo que generó unas expectativas para las que no estábamos preparados.
Además, la fecha fue modificada después de haberse acordado el formato original, lo que hizo imposible que yo pudiera estar presente para supervisar personalmente el evento. En ese momento me encontraba en otro país atendiendo nuestras empresas, que a su vez sostienen la importante inversión que hemos realizado en la Sierra de Gata.
También entiendo y comparto la opinión de que la presentación no estuvo a la altura de los estándares que nos exigimos a nosotros mismos. En cuanto a los cubiertos y vajilla desechables, no estuve presente para verlo personalmente, pero revisaré lo sucedido para entender exactamente qué ocurrió.
Hemos dedicado mucho tiempo, esfuerzo y recursos económicos a la Sierra de Gata porque creemos profundamente en esta tierra y en su futuro. Por ello, espero que nuestro compromiso no sea juzgado únicamente por un almuerzo que, lamentablemente, no salió como estaba previsto.
Dicho esto, agradezco cualquier crítica constructiva o sugerencia que nos ayude a mejorar. Si desea compartir alguna idea concreta, estaré encantado de recibir un mensaje privado y responder personalmente.

Unforgettable and magical. The perfect setting for a unique moment.
I decided to choose Aqua et Oleum for a crucial moment in my life: to propose to my partner, and I could not have made a better decision. From the first moment I contacted them, the entire team dedicated themselves completely. They took care of absolutely everything with astonishing discretion, care, and professionalism.

All very beautiful fantastic site. Beautiful garden. Irreproachable work from the outside. Very nice pool. Super friendly staff. But breakfast was very weird. I had nothing prepared but even laminated fruit and juice. The room was fantastic, but it smelled very muddy. The hygiene left a lot to be desired. For 4 stars, the requirement and standard must be higher.
